Mustard Butter Game Hens

You can flatten game hens by pressing straight down on the breast bone. By doing this to the game hen you will expose more of the meat to the heat allowing it to cook more evenly.

Prep Time: 15 minutes

Cook Time: 1 hour, 00 minutes

Ingredients:

  • 4 game hens cleaned and flattened
  • 1/4 cup of Dijon mustard
  • 1/4 cup of butter
  • 3 cloves of minced garlic
  • 1 teaspoon crushed rosemary
  • 1 teaspoon lemon juice
  • 1 teaspoon ground black pepper

Preparation:

Wash game hens thoroughly, cutting off any excess folds of skin. Mix remaining ingredients together in a bowl. Lightly coat each hen, reserving about half of the mustard butter mix. Place on preheated grill on medium heat, or indirectly if your using coals. Turn occasionally. After 30 minutes re-coat with remaining mustard butter. Cook until done (about 15 to 30 minutes more).
