Moroccan-Style Game Hens

This power packed recipe for Cornish game hens is one you will remember for years to come. The combination of herbs, spices, and peanut oil really brings out the natural flavor of this bird.

Prep Time: 15 minutes

Cook Time: 50 minutes

Ingredients:

  • 4 Cornish game hens
  • 1/4 cup peanut oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons cilantro
  • 3 cloves garlic, minced
  • 1 tablespoon paprika
  • 2 teaspoons allspice
  • 2 teaspoons cinnamon
  • 2 teaspoons turmeric
  • 2 teaspoons grated ginger
  • 2 teaspoons lemon zest
  • 1/2 teaspoon salt
  • olive oil

Preparation:

Combine all ingredients besides game hens, in a small bowl. Place hens in a shallow glass dish and pour marinade over top. Cover and allow to marinate for 4-6 hours in the refrigerator. Preheat grill for medium-high heat. Remove hens from dish and discard marinade. Place on grill breast side down and cook for 15-20 minutes. Turn hens and grill for an additional 30. When juices run clear or internal temperature of the thigh reads between 175-180, the hens are cooked. Remove from grill, allow to rest for a few minutes and serve.
