Grilled Herb Duck Breasts

This is a nice and simple grilled duck recipe. Remember that duck breast should be served rare, so the cooking time shouldn't take too long.

Prep Time: 15 minutes

Cook Time: 12 minutes

Ingredients:

  • 4 duck breasts
  • 1/2 cup olive oil
  • 1 lemon, juiced
  • 3-4 juniper berries, minced
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground bay leaves
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika

Preparation:

Put all ingredients except duck breasts, in a small saucepan. Simmer for about 5-7 minutes. Remove mixture from heat and allow to cool. Place duck breasts in a resealable plastic bag. Pour cooled mixture over duck, seal bag, and allow to marinate in refrigerator for 6-8 hours. Preheat grill for medium-high heat. Remove duck breasts from plastic bag, reserving marinade. Place duck on lightly oiled grill grate. Allow to grill for 3 minutes, baste with reserved marinade, turn, and repeat process. When internal temperature of breasts reach 145 degrees, remove from heat, slice and serve.
