Plum and Ginger Game Hens

This recipe calls for the game hens to be cut in half to ensure fast cooking. You can also rotisserie them, but make sure to keep them whole.

Prep Time: 25 minutes

Cook Time: 45 minutes

Ingredients:

  • 2 Cornish game hens (2 pounds each)
  • 3/4 cup plum preserves
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon Chinese five-spice powder
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper

Preparation:

Preheat grill for medium heat. Combine all glaze ingredients in a medium saucepan, until jelly is melted. Remove giblets from game hens and discard. Cut each hen in half lengthwise. Wash and pat dry with paper towel. Place hens on grill rack skin side down and cook 10 minutes, turn and coat with glaze. Coat hens with sauce three more times throughout cooking process. Cook for 45 minutes or until juices run clear. Remove and serve.
