Brisket Beer Mop
This flavorful barbecue mop recipe will keep your brisket full of flavor and add moisture during the smoking process. Remember to get the mop on the meat and don't worry about the fat.

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: Makes about 3 cups

Ingredients:

  • 1 12 oz beer
  • 1/2 cup cider vinegar
  • 1/3 cup water
  • 1/3 cup light oil (Canola is good)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon cayenne

Preparation:

Mix all ingredients together in a sauce pan over low heat. Cook until thoroughly dissolved. Mop over brisket ever hour until Brisket is cooked. Brisket will take 1 to 1 1/4 hours per pound in a smoker at about 200-220 degrees F.

I've been using this recipe (with minor changes, more beer, more Worchesterchire, for example) for a couple years now, and while I don't know how much this adds to the finished product, I get a LOT of compliments on my brisket. Thanks!
