Owensboro Mutton Barbecue Mop

This mop is the real secret behind Kentucky Barbecue. The combination of vinegar with beer and the spices is really what gives this smoked lamb its flavor.

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: Makes about 3 cups

Ingredients:

  • 1 cup white vinegar
  • 1 cup water
  • 1 cup beer (or beef stock)
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons black pepper
  • 1 tablespoon brown sugar
  • 1/2 tablespoon salt
  • 1/2 tablespoon garlic powder
  • 1 teaspoon cayenne

Preparation:

Mix all ingredients together in a saucepan over a low heat. Use mop about once an hour while the mutton roast is smoking.

Having lived in Owensboro several years during my childhood, mutton was often served at the dinner tables of our family, but I had never done the cooking myself. The recipe is easy to follow and the flavor of the completed roast brought back great memories! Thanks for this great tasting mop!
