Stuffing for Turkey

Manypaws2000 posted this recipe for a great turkey stuffing that doesn't actually get stuffed. With all the sausage and vegetables this is a great Thanksgiving side dish.

INGREDIENTS:

  • 1 lb. bulk sausage, cooked, drained and cooled. (country sausage or your favorite Italian sausage)
  • 3 T. melted margarine + 1 T. vegetable oil
  • 1 c. finely chopped celery
  • 1 c. finely chopped onion
  • 2 Granny Smith apples, peeled, chopped
  • 1 small can chicken broth
  • 2 beaten eggs
  • 1/2 c. minced *fresh* Italian parsley-flat leaf
  • 1 tsp. poultry seasoning or herbs of your choice.
  • Freshly ground black pepper to taste.
  • Add 6 c. stuffing cubes or crumbs.

PREPARATION:

In the same pan you cooked the sausage, sauté the margarine, vegetable oil, celery, onion and apples. Cook on medium heat until transparent. Remove with slotted spoon, and cool to room temp. In a large bowl combine everything. Mix very lightly until evenly combined, and place in your prepared pan or casserole. Cover with foil and bake at 350F approx. 40 minutes before the turkey [or chicken ] is ready to serve. If you spray the contacting side of the foil with nonstick, it's easier to remove.
