While this might sound very exotic, Ostrich has a very beef like quality but is a much leaner meat. You might just be able to fool a few people with this recipe.

Yield: Makes 4 1/4-Pound Burgers
- 1 pound ground ostrich
- 2 tablespoons onion, finely chopped
- 1 clove garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Saute onion and garlic in olive oil until slightly brown. Allow to cool. Combine with other ingredients and form into patties about 1 inch thick. Preheat grill. Place patties on hot grill and cook on each side for 4 to 5 minutes or until done. Serve on buns with your favorite hamburger toppings.
