South Carolina Coleslaw

User Rating 3 Star Rating (1 Review)

A great coleslaw for topping off pulled pork sandwiches. You get a relatively dry slaw from this recipe so that it holds to the sandwich better. It is also mild enough not to overpower the smoked pork.

Prep Time: 20 minutes

Cook Time: 5 minutes

Total Time: 25 minutes

Yield: Serves 6 as a side dish

  • 1 large head cabbage, chopped finely
  • 1 red bell pepper, sliced into thin strips
  • 1 sweet onion, chopped finely
  • 1 carrot, grated
  • 1 cup sugar
  • 1 cup apple cider vinegar
  • 2/3 cup vegetable oil
  • 2 teaspoons dry mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Combine sugar, vinegar, oil, mustard, salt and pepper in a saucepan over a low heat. Stir until sugar dissolves. Refrigerate dressing for 30 minutes. Place vegetables in a serving dish and toss. Allow dressing to cool and pour over and toss until evenly coated. Cover and refrigerate until cold.

it aint nc BBQ slaw, Member jeffblackley

I found that you should cool the dressing before tossing it with the cabbage, aside from that solid recipe. I more used to NC style ketchup based ( a little perrery ) or mayo based coleslaw (sweeter). My wife was born and raised in SC and is used to mayo based slaw as well, but nice variation om slw overall
