Grilled Sausage Soup

By grilling ingredients before you add them to things like soups or stews, you'll get all that fantastic grilled flavor in everything you cook.

INGREDIENTS:

  • 1 pound hot Italian sausage
  • 1 1/2 quarts beef broth (you can use bullion)
  • 1 pound tomatoes
  • 1/2 pound of bow tie pasta
  • 1 large onion
  • 1 each green and yellow bell pepper
  • 1 small zucchini
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 teaspoon parsley flakes

PREPARATION:

Prepare ingredients by cutting onion, tomatoes, and peppers into quarters. Split zucchini in half lengthwise. Preheat grill and cook sausages. When sausages are cooked remove from grill and add vegetables. Cut sausages into disks and set aside. While vegetables cook heat oil in a large soup pot. When oil is hot add garlic. When vegetables are starting to get soft and have good grill marks remove from grill and turn grill off. Chop up onion and add to pot. Chop remaining ingredients. When the onion is opaque and soft add sausage pieces and stir. Add remaining ingredients except cheese. Stir and reduce heat to low simmer. Let simmer a couple of hours. When ready to serve dish into bowls and top with cheese.
