Smoked Beans

To get that authentic smoked flavor into these barbecue beans, add pieces of smoked meat to it. I always try to save something back from any smoke so I have something to add to soups, beans, and more. Burnt ends are the perfect meat for these beans.

Prep Time: 20 minutes

Cook Time: 2 hours

Total Time: 2 hours, 20 minutes

Yield: Serves 6

Ingredients:

  • 2 16-ounce cans of navy beans
  • 1 cup chopped burnt ends (any good smoked meat can be substituted)
  • 3/4 cup BBQ sauce (your favorite)
  • 1/2 medium onion chopped
  • 1 small green pepper chopped
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • 1/2 teaspoon dry mustard

Preparation:

Drain beans and mix everything together in a smoker safe pot. Place in smoker at about 200 degrees and let cook for about 2 hours. It will be ready in about an hour but the longer you smoke it the more smoke flavor you get. Test every 30 minutes until it reaches the desired flavor.

I had tried out a couple different recipes for BBQ beans before I came across this recipe, but I definitely don't have to look anymore. I'll admit I modify it a bit by cooking it in the crockpot for 3-4 hours on high or 6-8 on low rather than in the smoker -- I find it to be much simpler. I've also used 6-8 slices of lightly cooked smoked bacon as well as some liquid smoke if I don't have any burnt ends on hand, and they've turned out just fine. I'll also add a chopped jalapeno or a half teaspoon of cayenne pepper for more kick. But everyone loves these beans. They go quickly whenever I make them, and get rave reviews. It's easy enough to double the quantities if I'm serving a bunch of people, too. Thanks for the recipe!
