Grilled Beef and Blue Cheese Quesadillas

These delicious steak quesadillas make a wonderful appetizer or weekday meal. If you are not a fan of blue cheese you can substitute with something else. Feta or swiss cheese will work best.

Prep Time: 13 minutes

Cook Time: 6 minutes

Ingredients:

  • 1 pound flank steak, grilled and cut into strips
  • 6-8 flour tortillas
  • 3/4 cup blue cheese, crumbled
  • 3/4 cup vinaigrette
  • 1/2 red onion, chopped
  • 2 avocados, sliced

Preparation:

Preheat grill for medium heat. Combine red onion, vinaigrette, and blue cheese in a bowl. Place even portions of steak and blue cheese mixture over tortillas. Fold tortillas in half and place onto grill. Cook for 3 minutes, turn and cook for a remaining 2 minutes. Remove from heat and serve with sliced avocados on top.
