Grilled Bratwurst in Beer and Onion Sauerkraut

This Bratwurst recipe has an onion sauerkraut that accompanies it. You can omit the bacon if you wish to lower the fat content.

Prep Time: 15 minutes

Cook Time: 7 minutes

Ingredients:

  • 8 bratwurst links
  • 2 (8-ounce) bottles dark beer
  • 3 cups sauerkraut
  • 2 cups yellow onions, thinly sliced
  • 2 cups red onions, thinly sliced
  • 2 strips bacon, chopped
  • 2 tablespoons light brown sugar
  • 1 tablespoon minced garlic
  • 1 teaspoon black pepper
  • 1 teaspoon juniper berries, crushed
  • 1 teaspoon salt
  • 8 Buns or Rolls

Preparation:

Puncture each sausage several times with fork. Simmer the red onions and beer over medium heat. Add bratwurst and simmer for 5 minutes. Remove the sausages, reserving the liquid. In a large pot, cook bacon until crisp. Remove from pot and allow to drain on paper towels. Place yellow onions into pot with bacon fat and cook for 5 minutes. Add garlic and juniper berries. Simmer for 1 minute, then, add the sauerkraut and beer. Add sugar, salt and pepper, and bring to a boil. Reduce heat and simmer for about 90 minutes. Preheat the grill for medium heat. Cook brats until for 7 minutes, turning occasionally. Remove from heat and set aside. Place brats in buns or rolls and top off with onion sauerkraut.
