This is a delicious grilled bread recipe that compliments anything from chicken to fish.
Prep Time: 12 minutes
Cook Time: 3 minutes
Ingredients:
- 12 slices of French or sourdough bread, about 1/4 inch thick
- 1 small red bell pepper, chopped
- 1 small chopped onion
- 1/4 cup fresh cilantro or coriander leaves
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon salt
Preparation:
Puree all ingredients, except bread, in a blender or food processor. Transfer mixture to small saucepan and simmer for 3-5 minutes. Preheat grill for medium heat. Brush one side of bread with bell pepper mixture. Place on grill, brushed side down, and cook for 3 minutes. Remove from heat and serve.
