Grilled Pita Pizzas

This is a great Greek style pizza that is quick and easy to make. All you need to do is pick up some pita bread and toppings at the store, assemble and warm on the grill.

Prep Time: 12 minutes

Cook Time: 5 minutes

Ingredients:

  • 4 pita breads
  • 1 cup tomatoes, seeded and diced
  • 1/2 cup kalamata olives, pitted
  • 1/2 cup red onion, diced
  • 1/3 cup feta cheese, crumbled
  • 4 tablespoons olive oil
  • 2 tablespoon fresh mint, finely chopped

Preparation:

Preheat grill for medium-high heat. In medium bowl, combine tomatoes, olives, onion, mint, and 2 tablespoons of olive oil. Brush pita bread on both sides with remaining olive oil. Set on grill grate and cook for 2 minutes. Turn and top with tomato-herb mixture and cheese. Cover grill and cook for an additional 2-3 minutes. Remove from heat and serve.
