Grilled Zucchini Yogurt Dip

This is a quick and delicious grilled dip recipe that can be served up with grilled potato chips or grilled pita slices.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 medium sized zucchini
  • 1/3 cup yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh mint leaves, minced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation:

Preheat grill for medium heat. Slice zucchini lengthwise into 1/4 inch thick pieces. Set on lightly oiled grill rack and cook for about 5 minutes per side. Remove from heat and cool slightly. In small bowl combine minced garlic with salt and black pepper to make a paste. Chop grilled zucchini into small pieces and stir into garlic paste. Add remaining ingredients and mix well.
