This fantastic grilled pizza recipe is a cross between a pizza and a tostada.

Prep Time: 12 minutes

Cook Time: 6 minutes

Ingredients:

  • 4 whole pita bread or small pre-cooked pizza crusts
  • 1 to 1 1/2 cups pepper-jack cheese, shredded
  • 1 cup cook chicken or steak,. chopped
  • 2 large tomatoes
  • 1 large avocado, sliced
  • 1/4 cup green onions, sliced
  • 1/4 cup jalapeños, fresh or pickled
  • 1 to 2 tablespoons vegetable oil
  • 1 tablespoon lime juice
  • 1 teaspoon cumin powder
  • salt and pepper to taste

Preparation:

Preheat grill for medium heat. Combine all ingredients beside pita bread and cheese, in a medium mixing bowl, set aside. Place pita rounds on grill and allow to cook for two minutes. Turn pita and sprinkle with pepper-jack cheese. Cover and allow to cook for an additional 5 minutes. Remove cooked pitas, place in a large platter, top with avocado and tomato mixture, and serve.
