This quesadilla recipe is ideal for a weekday meal. Not only is it easy to prepare, but you can be creative and mix and match as you please. Serve these up with a piping hot bowl of soup for a delicious, hearty meal.

Ingredients:
- 8 flour tortillas
- 1 1/2 cups cooked chicken, shredded
- 1 1/2 cups mozzarella cheese
- 3/4 cup cream cheese
- 3/4 cup feta cheese
- 3 small tomatoes, chopped
- 1/3 cup sliced black olives
- aluminium foil
Preparation:
Preheat grill for medium heat. Tear 4 large pieces of aluminum foil, about 30 x 18 inches, and brush lightly with olive oil. Place 4 tortillas on each piece of foil. Spread 2-3 tablespoons of cream cheese onto each tortilla. Add tomatoes, chicken, cheeses, and sliced olives on top of cream cheese. Cover with remaining 4 tortillas. Fold foil over quesadillas and pierce once or twice with a knife. Place packets onto grill and allow to cook for 8-10 minutes. Turn packets over and cook for a remaining 5 minutes. Remove from heat and carefully open packets. Cut quesadillas into triangles and serve.
