Apricot Pork Marinade

This pork marinade adds a delicious fruity flavor to pork without being overly sweet.

Prep Time: 10 minutes

Ingredients:

  • 1 onion, chopped
  • 1/2 cup apricot preserves, pureed
  • 1/2 cup soy sauce
  • 1/4 cup lemon juice
  • 1/4 cup sherry
  • 2 tablespoons oil
  • 1/2 teaspoon ground ginger

Preparation:

Combine all ingredients and mix well. Marinate pork chops in a resealable bag for 3 to 4 hours. Brush marinade over racks of ribs, cover and refrigerate for 5 to 6 hours.
