This recipe is for those of you who don't have the kind of smoker that will allow you to cook a brisket for 12 (or more) hours. Use this marinade recipe to help tenderize the meat and add a smoky flavor to it.

Yield: Makes about 3 cups
Ingredients:
- 1/2 cup white vinegar
- 1/4 cup canola oil
- 1 12 ounce beer
- 2 tablespoons liquid smoke
- 1 medium onion, finely chopped
- 1 tablespoon salt
- 1 tablespoon brown sugar
- 1 teaspoon cayenne
- 1 teaspoon black pepper
Preparation:
Mix all ingredients together. Store in the refrigerator in an airtight container. Make this marinade a day or two early to let the flavors blend better.
