Lemon and Rosemary Marinade

This is a great marinade recipe for chicken. It gives you that lemon-herb flavor that you find on so many store made chickens, but this is better.

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: Makes about 1 cup of marinade


  • 3 large lemons
  • 1/4 cup fresh rosemary (2 tablespoons dried rosemary)
  • 1/4 cup of olive or salad oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper


Cut lemons in half and squeeze out the juice into a nonreactive bowl or resealable plastic bag. Add in remaining ingredients, mix well. Great for chicken. Marinate for 2 hours.

Good basic start, but..., Member meidego

This is a good basis for a marinade. I would absolutely cut back on the rosemary to about 3 tablespoons of chopped fresh rosemary because this herb is VERY strong and can overpower everything. If you want to make this a Greek style marinade, cut the rosemary to 1 tablespoon, add 2 tablespoons of dried oregano, 1 teaspoon salt and 1 teaspoon ground black pepper, and keep everything else the same. Very good on chicken and even lean lamb chunks for the grill.
