The smoke flavor of the chipotle chile peppers in this marinade gives everything you marinate in this marinade a great, smokey flavor. The tomatoes bring an acid that tenderizes and blend the flavors kind of like a good marinara the next day.

Yield: Makes about 3 1/2 cups
Ingredients:
- 1 jar dried tomatoes (not packed in oil)
- 2 dried chipotle chile peppers
- 1 cup red wine
- 1 cup water
- 1/2 cup chopped onion
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Preparation:
Bring the 1 cup or water to a boil and pour into a non-metal dish. Add tomatoes and chipotle peppers. Tossing every few minutes, soak for 30 minutes, until soft. Remove peppers from water. Cut away stems and remove seeds. Place into a blender. Pour in tomatoes and soaking water. Add other ingredients and blend until smooth. This marinade can be stored in a non-metal container in the refrigerator for up to one week.
