Chicken is best if it gets a good marinade before it hits the grill to protect it from the high heat and to prevent it from drying out. It also adds extra flavor that is important, particularly if you are grilling chicken breasts. This marinade is perfect for chicken pieces or whole chicken.
Yield: Makes about 1 1/4 cups
Ingredients:
- 3/4 cup olive oil
- 1/4 cup white vinegar
- 2 tablespoons balsamic vinegar
- 1 tablespoon salt
- 1 tablespoon white sugar
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons black pepper
- 2 teaspoons red pepper flakes (optional)
Preparation:
Combine all ingredients and mix well. Pour into a ziptop bag and add chicken. This is enough marinade for 4 to 5 pounds of chicken.
