Skinless, boneless chicken breasts can dry out quickly on the grill. This chicken breast marinade helps solve this problem by mixing a little vinegar with a good dose of olive oil. This creates a barrier between the chicken and the hot cooking grate so you can keep your chicken tender and moist without it drying out.
Yield: Makes about 1 cup of marinade
Ingredients:
- 3/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 teaspoon salt
- 2 teaspoon white sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes (optional)
Preparation:
Combine all ingredients and mix well. Pour into a ziptop bag and add chicken breasts. This is enough marinade for 4 to 6 chicken breasts.
