Chinese Lamb and Chilies

This grilled lamb roast is cubed, skewered, and marinated in a fantastic sauce. Add the vegetables of your choice and make these kebabs a whole meal.

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 pounds lamb roast, cut into 1 inch cubes
  • 8 whole jalapeno chilies
  • 1/2 cup lemon juice
  • 1/4 cup chili oil
  • 2 tablespoons rice wine
  • 4 cloves garlic, minced
  • 2 teaspoons black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar
  • scallions, chopped
  • cilantro, chopped

Preparation:

Combine chili oil, lemon juice, rice wine, garlic, pepper, salt and sugar and mix well. Place lamb and chilies in a large resealable bag or shallow baking dish Pour marinade mixture over top. Turn to coat. Cover and refrigerate over night. Thread lamb and jalapenos onto bamboo skewers. Place on preheated grill for about 8 to 10 minutes, turning occasionally until done. Serve with scallions and cilantro. Traditionally this is served on bread so you can use rolls to make a sandwich out of this dish.
