Moroccan Lamb Leg

This is a flavorful, simple, yet exotic way to prepare a grilled lamb leg.

Prep Time: 15 minutes

Cook Time: 30 minutes

Ingredients:

  • 1 boneless lamb leg, about 3-4 pounds
  • 1/3 cup fresh chopped cilantro, loosely packed
  • 1/4 cup fresh chopped mint, loosely packed
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons ground coriander
  • 1 teaspoon ginger, grated
  • 1 teaspoon kosher salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon black pepper

Preparation:

Combine all herbs, spices, herbs, and olive oil in a small bowl. Place boneless lamb leg in a shallow dish and coat with herb mixture. Cover lamb, and allow to marinate for 2-4 hours in refrigerator. Preheat grill for medium-low heat. Place lamb on grill rack and cook on direct heat for 20-30 minutes, or until desired doneness is reached. Allow lamb to rest for 10 minutes before carving.
