Lamb Chops with Mint

These moist lamb chops are served up with a flavorful minty sauce.

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

  • 6 lamb loin chops with bone
  • 1/3 cup chicken stock
  • 1/4 cup chopped green onions with tops
  • 2 tablespoons balsamic or red wine vinegar
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Preparation:

Preheat grill. Sprinkle chops with salt and pepper and grill over a medium hot fire until done. About 4 to 5 minutes per side. Meanwhile, in a sauce pan combine olive oil and butter over a medium high heat. Add green onions and sauté for about 2 minutes. Add chicken stock and vinegar. Simmer uncovered for another 2 minutes or until it starts to thicken. Stir in 1 tablespoon of mint.

Place chops on serving platter and pour sauce over top. Garnish with remaining mint.
