- 1 cooked ham, about 10-12 pounds
- 1 bottle port
- 1 cup plum jelly or preserves
- 1 tablespoon grated lemon zest
- 2 teaspoons dry mustard
- 15-20 cloves
Prepare smoker. Remove rind from ham and score in a diamond pattern with knife. Insert cloves into patterns. Place ham in a shallow dish and pour all but 1/4 cup of port over it. Place ham into smoker and cook for 3 1/2 hours. Combine remaining 1/4 cup port, plum jelly, mustard, and lemon zest in a small saucepan until melted. Use as a baste for the ham during the last 30 minutes of smoking. Remove, slice and serve.
