Ingredients:
- 2 pounds ground sirloin
- 1 large(4 inch diameter)sweet onion, preferably Vidalia
- 1 dollop of Dijon mustard
- 4 fresh baked hamburger buns
- 1 wedge imported Blue Cheese - approximately one-half pound
Preparation:
Divide ground sirloin into four 8 ounce portions.* Divide each 8 ounce portion into equal 1 inch thick patties. Slice the wedge of Blue Cheese into four 1/4 inch wedges being careful not to crumble. Place each sliced wedge in between two patties and mold by hand into rounded, teacup-size diameter. Crimp edges together firmly to completely seal the patty. Cook the prepared hamburger patties on a prepared hot outdoor grill approximately 3 to 4 minutes on each side for medium rare.* Place the 4 fresh baked hamburger buns face down on the hot grill until lightly browned.* Slice the sweet onion into four 1/8 inch slices. Place the sliced onion on the cooked hamburger and add a dollop of Dijon mustard spread thinly over the onion. Serve immediately with any cold summer potato or pasta salad.* Ground sirloin is recommended because the mixing of the lean beef with the Blue Cheese produces a superior flavor. Hamburger is best cooked medium rare, as overcooking will diminish the flavor.
* Fresh baked hamburger buns are readily available at most major supermarkets. They are thicker and retain the juices much better than packaged hamburger buns.
