Ingredients:
- 1 ripe honeydew mellon, cut into 2 inch cubes
- 1/4 cup fresh lemon juice
- 2 tablespoons artificial sweetener or Splenda
- 1 teaspoon ginger, minced

Preparation:
Combine all lemon juice, sweetener, and ginger in a large bowl. Add sliced melon and toss to coat. Let stand for 5-7 minutes in room temperature. Preheat grill for medium-high heat. Thread melon pieces onto skewers. Place on grill and cook for about 3-4 minutes, or until slightly soft and beginning to brown. Remove from heat and serve with favorite ice cream.
