Ingredients:
- 1 pound white fish fillets
- 1 onion, chopped
- 6 cashew nuts
- 1 teaspoon chili powder
- 1/2 teaspoon turmeric
- 1 tablespoon fresh lemon grass, chopped
- 1 teaspoon fresh mint, chopped
- 1/2 teaspoon black pepper
- 1 tablespoon sugar
- 1/2 cup coconut milk
- 1 tablespoon coriander
- salt to taste
- several pieces of banana leaf cut into 6 inch squares
Preparation:
Make sure that there are no bones in the fish. Cut into small pieces and combine with other ingredients (except the banana leaves) in a food processor. Blend until smooth. Soften banana leaves in boiling water for about 1 minute. Place 2 tablespoons on the fish mixture on a piece of banana leaf. Fold leaf and secure firmly with a toothpick. Repeat until you run out of fish. Preheat grill. Place packets on hot grill and cook for about 5 minutes flipping once.
