Jamaican Halibut

This Halibut is grilled Jerk style and has lots of flavor. The rum really stands out in this recipe giving this fish a rich flavor.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 4 6-ounce halibut fillets
  • 1 cup orange juice
  • 1/2 cup dark rum
  • 1/4 cup soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cayenne
  • 1/4 teaspoon cinnamon

Preparation:

Combine all ingredients except the halibut and mix well. Pour over halibut fillets, turn to coat and cover. Refrigerate for 2 hours. Oil grate and preheat grill. Remove halibut from marinade and grill over high heat for about 3 to 4 minutes. Turn and continue grilling from 3 to 4 more minutes. Great served with Tropical Fruit Salsa.
