This Halibut is grilled Jerk style and has lots of flavor. The rum really stands out in this recipe giving this fish a rich flavor.

Ingredients:
- 4 6-ounce halibut fillets
- 1 cup orange juice
- 1/2 cup dark rum
- 1/4 cup soy sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon fresh ginger, grated
- 1 tablespoon thyme
- 1/2 teaspoon salt
- 1/2 teaspoon allspice
- 1/2 teaspoon cayenne
- 1/4 teaspoon cinnamon
Preparation:
Combine all ingredients except the halibut and mix well. Pour over halibut fillets, turn to coat and cover. Refrigerate for 2 hours. Oil grate and preheat grill. Remove halibut from marinade and grill over high heat for about 3 to 4 minutes. Turn and continue grilling from 3 to 4 more minutes. Great served with
