Caribbean Fillet of Fish

These fish fillets are basted in a rich Caribbean-style sauce which gives them a fantastic flavor.

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

  • 3 pounds white fish fillets, about 3/4 inch thick
  • 4 shallots, peeled and finely chopped
  • 4 cloves garlic, minced
  • 1 cup orange juice
  • 1 cup white wine
  • 1/4 cup dark rum
  • juice of 2 limes
  • 2 tablespoons fresh chopped rosemary
  • 1/4 cup soy sauce
  • 1/4 cup chopped parsley
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon salt

Preparation:

Remove skin from fish fillets. Make sure all bones have been removed. Rinse and pat dry with paper towels. Combine other ingredients (everything but the fish) in a large saucepan. Bring to a boil and reduce heat to a simmer. Reduce by half. Preheat grill. Grill fish about 3-4 minutes per side. Remove from grill and pour equal amounts of the sauce over each fillet. Serve hot.
