Sweet n Sour Halibut

The thick, rich sauce which is poured over these halibut steaks is the same sauce you marinate them in. Remember to keep the sauce separate from the marinade so you don't contaminate your sauce. You will get a lot of flavor without a lot of fuss.

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

  • 4 halibut steaks (1 1/2 pounds)
  • 1 each red and green bell pepper
  • 2 scallions, cut into 2 inch strips
  • 1/4 cup water
  • 1/4 cup brown sugar
  • 3 tablespoons cider vinegar
  • 3 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 3/4 teaspoon fresh grated ginger

Preparation:

Coat grill grate with oil and preheat. Cut bell peppers in half and remove seeds. In a large non-reactive bowl combine brown sugar, water, vinegar, ketchup, soy sauce, garlic and ginger. Remove 1/4 cup of the sauce and set aside. Dip halibut steaks into mixture to coat thoroughly. Grill bell peppers cut side up until the skin starts to blacken. Peel peppers and cut into thin strips. Grill halibut until done. Place each steak on a plate, top with bell peppers and scallions and pour and equal amount of the reserved sauce over each steak.
