Grilled Salmon in Corn Husks

This recipe calls combines the mild flavor of salmon with the sweetness of mangoes. What could be better?

Prep Time: 12 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 large salmon fillet, cut into 4 equal pieces
  • 4 fresh corn husks
  • 2 mangoes, seeded and sliced
  • 1 lemon, cut into thin slices
  • 2 tablespoons fresh cilantro or flat leaf parsley
  • salt to taste
  • kitchen twine

Preparation:

Preheat grill for medium heat. Season salmon pieces with salt and place into a corn husks. Top each piece with mango slices, fresh cilantro or parsley, and lemon slices. Close husks and secure with kitchen twine. Place husks on the grill and cook for 15-18 minutes. When fish flakes easily with fork, remove from heat and serve.
