Grilled Caper and Dill Salmon

This is a delicious grilled salmon dish. Remember to drain the capers before you mince them.

Prep Time: 12 minutes

Cook Time: 18 minutes

Ingredients:

  • 1 salmon fillet, about 2 pounds
  • 1/4 cup capers, drained and minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh dill, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons anchovy paste
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • oil

Preparation:

Preheat grill for medium heat. Remove any bones from salmon fillet. Combine remaining ingredients in a small bowl and brush onto salmon. Put salmon into a well oiled fish basket and place on grill. Cook salmon for about 15-18 minutes or when fish is no longer appears opaque. Remove from heat and serve.
