These wonderful salmon cakes can be served alone or as a nice addition to any salad. You can also serve them up burger style.

Cook Time: 6 minutes
Ingredients:
- 1 1/4 pounds of salmon fillet, diced into small pieces
- 1/2 cup breadcrumbs, preferably plain
- 1/4 cup mayonnaise
- 3 green onions
- 3 tablespoons fresh flat leaf parsley
- 2 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 2 teaspoons lemon zest
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- olive oil
Preparation:
Preheat grill for medium heat. Place salmon, Dijon mustard, and green onions into food processor. Blend until mixture is coarsely chopped. Transfer to a large bowl and blend in remaining ingredients. Shape 8 patties out of mixture. They should be 1/2 an inch thick. Brush with olive oil and place on the grill. Work carefully to keep the cake together. Cook for 3-4 minutes per side. Remove from heat and serve.
