Grilled Salmon Cakes

These wonderful salmon cakes can be served alone or as a nice addition to any salad. You can also serve them up burger style.

Prep Time: 15 minutes

Cook Time: 6 minutes

Ingredients:

  • 1 1/4 pounds of salmon fillet, diced into small pieces
  • 1/2 cup breadcrumbs, preferably plain
  • 1/4 cup mayonnaise
  • 3 green onions
  • 3 tablespoons fresh flat leaf parsley
  • 2 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • olive oil

Preparation:

Preheat grill for medium heat. Place salmon, Dijon mustard, and green onions into food processor. Blend until mixture is coarsely chopped. Transfer to a large bowl and blend in remaining ingredients. Shape 8 patties out of mixture. They should be 1/2 an inch thick. Brush with olive oil and place on the grill. Cook for 3-4 minutes per side. Remove from heat and serve.
