Ingredients:
- 1 1/2 pounds white fish fillets
- 1 cup red onion, chopped
- 1/3 cup olive oil
- 2 tablespoons cilantro, finely chopped
- 3 tablespoons lemon juice
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili powder
- 2 cloves garlic, minced

Preparation:
Cut fish into 1 inch squares. Place pieces in a resealable plastic bag. In a small bowl combine remaining ingredients. Add to fish. Mix thoroughly, seal bag, and allow to marinate in the refrigerator for 2-4 hours.Preheat grill. Remove fish from bag and discard marinade. Thread fish onto skewers. If using wooden skewers, make sure to soak them in water for at least an hour before threading fish. Place fish kebabs on grill and cook on medium-high heat for 8-10 minutes, turning occasionally. Remove from grill and serve.
