Halibut in Tropical Rum Sauce

This grilled halibut dish is accompanied by a sweet yet spicy sauce. Very flavorful!

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • 5 5-ounce halibut fillets (no skin)
  • 2 tablespoons butter, melted
  • salt and pepper to taste
  • cilantro springs for garnish
  • For sauce:
  • 3/4 cup slices bananas
  • 1/2 cup light rum
  • 1/2 cup lime juice
  • 1 small jalapeno pepper, seeded and finely chopped
  • 1/4 teaspoon salt

Preparation:

Preheat grill. Combine lime juice and rum in a small saucepan over a medium high heat. Reduce by half. Pour into a blender. Add bananas, jalapeno and salt. Blend until smooth. Return mixture to saucepan and keep warm. Meanwhile, combine butter, salt and pepper for the halibut. Brush over both sides of halibut fillets lightly. Place on hot grill and cook for about 2 to 3 minutes per side or until done. Remove from grill and place halibut on plates. Pour rum mixture over top. Garnish with cilantro and serve.
