Grilled Catfish in Corn Husks

Grilling fish in corn husks helps to keep it tender and moist, as well as flavorful.

Prep Time: 12 minutes

Cook Time: 12 minutes

Ingredients:

  • 4 catfish fillets
  • 4 fresh corn husks
  • 3-4 green onions,chopped finely
  • 1/4 cup butter, preferably unsalted
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation:

Preheat grill for medium high heat. Place each catfish fillets into a husk. Season with salt and pepper and remaining ingredients. Fold husks to cover fish and tie with kitchen twine. Place on grill and cook for 5 minutes over direct heat. Move husks to a cooler part of the grill and cook indirectly for 7-8 more minutes. When fish flakes easily with fork, remove from heat and serve.
