Spicy Satay Peanut Sauce

This is a great dipping sauce for any kind of grilled meat. It is goes particularly well, however with grilled chicken satay.

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • 2 tablespoons crushed dried red chilies
  • 1/4 cup rice wine vinegar
  • 3 tablespoons soy sauce
  • 2 tablespoons Asian-style chili oil
  • 1 tablespoon lime juice, fresh preferred
  • 1 tablespoon grated ginger
  • 1/2 cup chunky peanut butter
  • 1/2 cup coconut milk
  • 1/4 teaspoon ground cumin

Preparation:

Combine all ingredients in a blender and mix until smooth. Pour into a saucepan, bring to a boil, reduce heat and simmer for 15 minutes. Serve at room temperature. A great dipping sauce for most any grill meats, especially chicken.
