Vietnamese Chicken Breasts

This is a great way to grill your chicken and get your vegetables too. This is a fast way to get a great meal that you can serve up on a bun.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 4 skinless, boneless chicken breasts
  • 1/2 cup chopped broccoli
  • 1/4 cup radish sprouts
  • 2 tablespoons sugar
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon oil
  • 2 cloves garlic, minced
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon cayenne
  • 4 rolls, split

Preparation:

Combine sesame oil and cayenne. Brush over the surface of the chicken breasts. Grill chicken on preheated grill over medium fire for about 10 to 12 minute or until cooked through. Meanwhile combine sugar, soy sauce, oil, peanut butter, and garlic in a saucepan over a medium heat. Stir until sugar is completely dissolves and sauce is heated.

Place grilled chicken breasts on rolls, top with radish sprouts, broccoli, and sauce. Serve.
