Chicken under a Brick

You will want to have a good set of tongs or grill mitt to move the hot brick which flattens the chicken breast as it cooks. This is a great way to quickly cook chicken breasts.

Prep Time: 15 minutes

Cook Time: 8 minutes

Ingredients:

  • 2 chicken breasts, skinless and boneless
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon cayenne (optional)
  • 4 bricks wrapped in aluminum foil

Preparation:

Cut chicken breasts in half and trim off any excess fat. Combine other ingredients and place chicken breasts and marinade in a resealable bag. Refrigerate for 1 hour. Preheat grill. Remove chicken breasts from marinade and place on hot, oiled grill. Place a brick on top of each breast. Grill for 2 minutes. Lift brick with a grill mitt. Turn breast 90 degrees and replace brick. After another 2 minutes flip the breasts over, replacing the brick on top. Then again after 2 minutes lift the brick and turn the breasts 90 degrees. After the last two minutes, test for doneness and remove chicken from grill when done.
