Indonesian Chicken Breasts

These grilled chicken breasts are loaded with delicious flavor. If you want to try something a little different this is a great recipe to prepare.

Prep Time: 20 minutes

Cook Time: 15 minutes

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 medium red bell pepper, cut in half
  • 1/2 cup orange juice
  • 1/4 cup peanut butter
  • 1/4 cup shredded coconut
  • 1/4 cup currants
  • 2 tablespoons curry powder

Preparation:

Combine orange juice, peanut butter and curry powder in a nonreactive bowl. Blend until smooth. Add chicken and marinate for at least 1 hour, but not more than 24 hours. Preheat grill. Remove chicken from marinade and place on grill with bell pepper halves. Grill until the skin on the pepper is bubbling and slightly blackened. Grill chicken until juices run clear and meat is no longer pink. Remove from grill and slice pepper into thin strips and chop across the grain into small pieces. Top chicken with bell pepper strips, coconut and currants. Serve over hot rice.
