This is a quick and easy way to prepare a delicious Italian-herb rotisserie chicken. Keep the chicken basted with the herb mixture and you'll get an tender and juicy bird.

INGREDIENTS:

  • 1 whole chicken, about 3 to 4 pounds
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons italian seasoning
  • salt and pepper

PREPARATION:

Clean up the chicken, removing the giblets and trimming any excess skin or fatty parts. Rinse chicken inside and out and pat dry with paper towels. Season inside and out with salt and pepper. Place chicken onto rotisserie spit and set aside. Combine remaining ingredients in a small bowl and brush over chicken. Place chicken onto preheated grill and cook for about 1 to 1 1/2 hours occasionally brushing with herb mixture. Check for doneness with thermometer. Let stand 10 minutes before carving and serving.
