Gkai Kamin (Thai Style Chicken)

This delicious traditional Thai chicken is marinated with garlic and lemon grass, and grilled hot and fast.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 whole chicken (about 2 pounds)
  • 2 stalks lemon grass
  • 12 cloves garlic
  • 2 tablespoons salt
  • 2 (2 inch) pieces fresh turmeric, peeled and chopped
  • 1 teaspoon whole white peppercorns

Preparation:

Remove roots and leaves from lemon grass. Pound or grind lemon grass together with salt, garlic, turmeric and pepper. You want a fine paste. Cut chicken in half lengthwise (or you can buy it this way). Trim off excess fat and rinse. Pat dry with paper towels and rub with mixture. Cover and refrigerate for anywhere between 4 hours to overnight. Preheat grill. Cook chicken over medium heat for 10 to 15 minutes, or until done (juices should run clean).
