Applesauce Chicken

By Derrick Riches, About.com

You probably wouldn't think of applesauce as the basis for a barbecue sauce, but this recipe combines the concentrated apple flavor with the traditional makings of a great barbecue sauce to add a delicious flavor to this grilled chicken. Be sure to pick a "no sugar added" applesauce so that this barbecue sauce doesn't turn out too sweet.

Prep Time: 25 minutes

Cook Time: 25 minutes

Ingredients:

  • 1 whole chicken, cut up
  • 1 medium onion, finely chopped
  • 1 cup unsweetened applesauce
  • 1 cup ketchup
  • 1/4 cup cider vinegar
  • 2 tablespoons vegetable oil
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • black pepper to taste

Preparation:

Heat oil in a medium sized saucepan. Add onion. Sauté until onion is soft. Add applesauce, ketchup, vinegar, brown sugar, Worcestershire sauce and pepper. Bring to a boil while stirring. Reduce heat and let simmer. Preheat grill. Remove sauce from heat when it has thickened and set aside. Place chicken on grill skin side down. Close lid and grill for about 15 minutes. Turn and cook another 10 minutes. Turn again and brush a heavy layer of the applesauce mixture on the chicken. Continue cooking and adding sauce until the chicken is done.
