Caribbean Style Chicken

You can turn up the heat in this recipe by choosing a hot chili sauce or by adding hot peppers. This chicken is also great to use in tacos and fajitas.

Prep Time: 15 minutes

Cook Time: 25 minutes

Ingredients:

  • 2 pounds chicken, cut-up
  • 1/2 cup lemon juice
  • 1/4 cup chili sauce
  • 2 tablespoons Dijon style mustard
  • 1 tablespoon dried basil
  • 1 tablespoon fresh parsley, minced

Preparation:

Combine lemon juice, chili sauce, mustard, basil and parsley. Mix. Pour over chicken pieces in a shallow baking dish. Let sit in the refrigerator for at least 2 hours. Preheat grill. Drain chicken and discard marinade. Grill over medium heat until done, about 25-30 minutes.
