Lemony Pulled Chicken Sandwiches

This is a simple and delicious way to prepare pulled chicken. Remember to keep an eye on the temperature of the smoker and to add wood chips as needed.

Prep Time: 15 minutes

Cook Time: 8 hours, 00 minutes

Ingredients:

  • 1 whole chicken, about 5-6 pounds
  • 4 cups lemon flavored carbonated beverage
  • 1 tablespoon garlic powder
  • 1 onion, halved
  • 2 cups wood chips, soaked
  • 1 bottle barbecue sauce
  • buns

Preparation:

Wash and pat dry the chicken and stuff with onion halves. Place into a large resealable plastic bag and sprinkle with garlic powder. Pour lemon flavored carbonated beverage over chicken. Seal the bag, and allow to marinate in the refrigerator for 6-8 hours.

Prepare smoker and allow temperature to reach 225 degrees F. (110 degrees C.). Remove chicken from the plastic bag, discard marinade, and place on the grill grate. Cover and cook for 8-10 hours. Remember to add wood chips as needed during cooking process.

When cooked, remove chicken from the smoker and let cool. Once cooled, remove onions and skin from chicken. Pull all the meat from the bones and place in a large skillet. Add BBQ sauce and mix well. Let simmer on low heat until evenly heated. Serve on burger buns or bread of choice.
