Grilled Lime-Spice Chicken Kebabs

These spicy-lime chicken kebabs are sure to liven up any weekday meal and they are low in fat to boot.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: Serves 4

Ingredients:

  • 1 pound chicken breast (boneless and skinless), cut into 2 inch pieces
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons red wine vinegar
  • juice of 1 lime
  • 1 teaspoon chili powder
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper, ground
  • 1/4 teaspoon salt (more if needed)

Preparation:

Combine all ingredients, except for the chicken, in a medium mixing bowl. Place chicken pieces in a shallow dish, pour sauce over it, making sure to coat it well. Cover dish and place in the refrigerator for 1-4 hours.

Preheat grill. Thread chicken pieces onto skewers. If using bamboo skewers, make sure they have soaked in water for at least 1 hour before using. Place chicken kebabs on grill and cook on medium-high heat for 10-15 minutes. Serve immediately.
