Ingredients:
- 1 pound chicken breast (boneless and skinless), cut into 2 inch pieces
- 3 tablespoons extra virgin olive oil
- 1 1/2 tablespoons red wine vinegar
- juice of 1 lime
- 1 teaspoon chili powder
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon black pepper, ground
- 1/4 teaspoon salt (more if needed)
Preparation:
Combine all ingredients, except for the chicken, in a medium mixing bowl. Place chicken pieces in a shallow dish, pour sauce over it, making sure to coat it well. Cover dish and place in the refrigerator for 1-4 hours.Preheat grill. Thread chicken pieces onto skewers. If using bamboo skewers, make sure they have soaked in water for at least 1 hour before using. Place chicken kebabs on grill and cook on medium-high heat for 10-15 minutes. Serve immediately.
